Jenkins, 28, produced a killer last lap kick to see off the challenge of Australia's Erin Denshaw, clocking one hour, 58 minutes and 21 seconds and finishing a whole minute clear of her nearest rival.
American Laura Bennett complete the podium and also secured her Olympic selection in the process.
"It was just such a good race. We really had to work really hard for that,'' said Jenkins, who is joint top of the overall standings after her silver in Sydney behind Densham.
"I really pushed the swim and we really worked hard on the bike and that was hard all the way. I really enjoyed the run course. It was really cool. There was so many people out there supporting - it was awesome."
