The 28-year old, who was born missing legs below the knee and her left arm below the elbow, was nearly seven seconds quicker than France's Solene Jambaque, as she becomes the first Canadian to win five golds in a single Games.
"I don't think it's really set in yet," she said.
"I just feel kind of surprised still, it's crazy and way more than my expectations.
"It means a lot but it was never that target. I'm not a big record person, I don't think that way, I just want to win.
"It's been a tough week. I'm super tired now and mentally fried."
American Stephani Victor won the women's sitting event whilst Slovakia's Henrieta Farkasova took podium top spot in the visually impaired event.
Germany's Gerd Schonfelder added another gold to his medal collection with a victory in the men's super-combined (standing) - his fourth title of the Games following wins in the giant slalom, downhill and super-G.
Slovakia's Jakub Krako claimed the visually impaired event while Germany's Martin Braxenthaler took the sitting title.
However, there was disappointment for Great Britain's Sean Rose and Russell Docker, who both failed to complete the event.
